Embeddings are a way to turn words, sentences, or images into lists of numbers that a computer can compare. Things with similar meanings end up represented by similar numbers. For example, "king" and "queen" will have closer numbers than "king" and "car." This is what lets AI search for content by meaning (semantic search) rather than just exact keywords.
